Classic BBQ Chorizo

Ingredients:

4 Palenque chorizos (any variety)

1 tbsp olive oil

Optional: fresh lime wedges, chopped parsley for garnish

Bread rolls or tortillas (for serving)

Instructions:

Preheat the grill to medium-high heat. Lightly oil the grates to prevent sticking.

Prepare the chorizos:
Pat them dry with a paper towel and brush lightly with olive oil for a crisp finish. -
Grill:
Place chorizos on the grill and cook for 6–8 minutes on each side, turning occasionally, until fully cooked and nicely charred on the outside. -
Rest:
Let the chorizos rest for 2–3 minutes after grilling to let the juices settle. -
Serve:
Slice and serve with lime wedges and fresh parsley, or tuck into a toasted roll or warm tortilla.

Add grilled onions or peppers on the side for extra flavor.

Use a meat thermometer to ensure the internal temp reaches at least 160°F for pork chorizo.
