Chorizo & Cheese Arepa

Ingredients:

  • 1 cup precooked white cornmeal (arepa flour, such as PAN)

  • 1 cup warm water

  • Pinch of salt

  • 1 Palenque chorizo (crumbled or finely chopped)

  • ½ cup shredded mozzarella or queso blanco

  • 1 tbsp butter or oil (for cooking)

  • Optional toppings: avocado slices, hot sauce, or sour cream

 

Instructions:

  1. Make the Dough:
    In a medium bowl, combine the arepa flour, salt, and warm water. Mix with your hands until the dough comes together and feels smooth.
    Let it rest for 5 minutes so the cornmeal fully hydrates.

  2. Shape the Arepas:
    Divide the dough into 2 equal portions and shape each into a round patty, about ½-inch thick and 4 inches wide. Smooth the edges with your hands to avoid cracks.

  3. Cook the Arepas:
    Heat a skillet or griddle over medium heat and add the butter or oil.
    Place the arepas on the hot surface and cook for 5–6 minutes per side, or until a golden crust forms. Press gently with a spatula for even browning.
    Once both sides are crisp, set aside on a plate to cool slightly.

  4. Cook the Chorizo:
    In a separate skillet, cook the crumbled or chopped chorizo over medium heat for 5–7 minutes, until browned and cooked through. Remove from heat.

  5. Stuff the Arepas:
    Once the arepas are cool enough to handle, slice each open like a pita (but not all the way through). Fill generously with chorizo and shredded cheese.

  6. Melt the Cheese (Optional):
    Return the stuffed arepas to the skillet or oven for 2–3 minutes to melt the cheese inside.

  7. Serve:
    Serve warm with optional toppings like sliced avocado, hot sauce, or a dollop of sour cream.

 

Tips:

  • Don't overwork the dough—just mix until smooth. If it cracks, add a bit more water.

  • Use pre-cooked chorizo for less mess, or fresh chorizo for extra juiciness.

  • Mix up your cheeses: Try gouda, cheddar, or Dominican queso de freír for different flavor profiles.

  • Want a shortcut? Use store-bought arepas and toast them before filling.

  • These are great for breakfast or lunch, and you can prep the filling in advance to save time.
